When you switch to the raw foods diet, you’ll find that you lose a lot of things that you are used to in the Standard American Diet. In most cases, losing these things is ultimately very good and healthy for you, but it can make the transition more difficult to lose cookies and cakes, along with other unhealthy food options. Luckily, there are plenty of raw cookie recipes available so you can easily whip up a sweet treat, without worrying about breaking your diet!
How to Make Raw Cookies
Because they don’t require baking, you may find that these are even better to make than the baked version. We’ve pulled together several recipes so you can easily satisfy your sweet tooth without breaking your diet.
Raw Peanut Butter Chocolate Chip Recipe
You’ll Need:
- 1 cup almonds
- 1 cup dates
- 1/3 cup tahini
- 2 ½ tablespoons cacao nibs
- 1/8 teaspoon sea salt
Preparation:
- Process almonds in a food processor and process them into fine flour with a few tiny almond chunks.
- Add dates to the food processor and process again.
- Add tahini and salt to the food processor, and process until the tahini is well blended.
- Pour into a bowl and add cacao nibs. Stir in with a spoon.
- With your hands form into balls or cookie shapes.
You can eat immediately, and you can also refrigerate the leftovers for up to five days.
Raw Chocolate Cookies
You’ll Need:
- 1 ½ cup of raw cashews
- 1 cup almonds
- 1 cup dates
- 2 tablespoons honey
- 1 tablespoon coconut oil
- 1 tablespoon vanilla extract
- ½ cup cocoa powder
- A pinch of sea salt
How to Prepare:
- Process almonds and cashews into flour. Add in the remaining ingredients, except for the cocoa powder and sea salt, and process until dough-like.
- Add in the cocoa powder and sea salt, and process again.
- Form into cookies.
From here, you can enjoy these in a few different ways. You can easily refrigerate and eat them as-is, or you can dehydrate them for a couple of hours to make them more gooey.
Raw Lemon Cookies
You’ll Need:
- 1 cup cashews
- 1 cup unsweetened dried coconut
- 3 tablespoons fresh lemon juice
- 1 tablespoon honey
How to Prepare:
- Process the cashews in the food processor until they are flour.
- Add in the coconut and process again.
- Add in the lemon and honey, and process one final time until it resembles a dough.
- Shape into cookies and dehydrate for 8 hours. Refrigerate leftovers for up to 5 days.
Raw Chocolate Chip Cookies
You’ll Need:
- ½ cup cashews, ground into a flour
- ½ cup oats, ground into flour
- 1 ½ tablespoons of honey
- 2 tablespoons coconut oil
- A pinch of salt
- ¾ teaspoon of vanilla
- 3 tablespoons cacao nibs
How to Prepare:
- Mix all the ingredients in a bowl.
- Form into cookies, and freeze or refrigerate until set.
