Quinoa is the star of this recipe, and here’s why: it’s a gluten-free grain. It’s one of my personal favorites that I will make on batch cooking day for the week ahead, thanks to the fact that in just 1 cooked cup of quinoa, I can get 8g protein, 5g fiber, B vitamins, Omega-3 fatty acids and antioxidants, and more. And while it can be found in several varieties and colors, quinoa can also be bought in flour or flake form. This recipe calls for the latter.
